Description
Christian Bourillon produces farmhouse cheeses from raw milk. From March to November, he offers tomme and goat “crottins”.
He sells his cheese at the market in Aspet on Wednesday and Saturday.
Goats and kids are visible every day at the time of milking, in the evening from 6 pm and by appointment for groups. For sightseeing and shopping on the farm, the access is from the Place du General Barés by a charming 4 km mountain road (10mm drive. 1 hour walk).
Since ancient times, the wild beauty of the Pyrenean valleys, dairy and cheese production have been the vocation of the mountain. It is in this environment that goats are bred. They produce quality milk, flavoured with a mountain flora that gives rise to farm cheeses at the Palette farm.
It is only from raw milk of its flock that Christian manufactures cheese. Once poured into pots with rennet, the milk is allowed to stand for a day. The curd is ladled, which gives the “crottin” its original form.
At each stage of ripening, the cheese has a distinct personality:
Fresh, it is smooth and creamy, slightly melting
Dried, its aroma is frank and nuanced delicacy
Refined for a longer period of time in the cellar, it is covered with a white and blue flower and then develops a powerful taste.
You will always taste its flavour accompanied by a wine of character.
